ENERGY BALLS (vegan, g/f, soy free)

Everyday I’m ballin! You asked for it so here it is: the recipe for my energy balls! These bad boys are super simple, delicious, and when you buy the ingredients in bulk they’re zero waste!


INGREDIENTS: •1 cup coconut shreds

•1/3 cup melted coconut oil

•1/2 cup of nut butter (I used almond butter and peanut butter) • 1/2 cup almonds • 1/2 cup cashews • 1/4 pumpkin seeds

• 1/4 sunflower seeds • 1/4 of chocolate chips • 4 medjool pitted dates


DIRECTIONS:

-Blend all ingredients in a food processor or high speed blender. I suggest blending the dry ingredients first until they reach desired consistency and then adding in the nut butter and oil.

-Add in the nut butter and melted coconut oil and blend until the mixture forms a wet dough. If the mixture isn’t forming a wet dough , add in almond milk (1 tbsp at a time) until desired consistency is reached.

-Roll into balls and store them in the freezer for weeks on end! Don't stack the balls on top of each other as they may freeze together.

-Be sure to let them thaw for a few minutes before eating, otherwise they’ll be hard as a rock!

Feel free to tweak the recipes based off of your favorite nuts/ seeds or just use whatever you have in the pantry...the options are limitless! These are great to have in the morning before a workout since they give you sustained energy that lasts🎉 Ball out my friends! ⠀⠀
