TOFU BREAKFAST SCRAMBLE

If you're in the mood for a filling and savory breakfast, look no further! This tofu scramble is a wonderful replacement to the traditional scrambled eggs...if fact it's better because it's VEGAN.


INGREDIENTS:

• 1/2 yellow onion

• 1 clove of garlic

• 1/2 block of tofu

• 1/4 tsp turmeric

• 1/2 tsp paprika

• 1/2 tsp cumin

• salt to taste

• 2 Tbsp nutritional yeast

• 1 roma tomato

• handful of spinach


TOPPINGS:

• avocado

• green onion

DIRECTIONS:

-Remove tofu and 'drain'. Press down on tofu with a dish towel to drain the excess liquid (this well ensure the final result isn't soggy).

-In a medium pan heat up 1 Tbsp of oil over medium heat (can sub for water if you want recipe to be oil free).

-Dice the onion and add to pan. Let simmer over medium heat until the onion becomes translucent.

-Dice garlic and add to pan for one minute; stirring often.

-Crumble the tofu into pan. Use your hands to break up the tofu until it reaches desired consistency. Cook for 5-10 minutes; until remaining water has been cooked out of the tofu.

-Add turmeric, cumin, paprika, salt, and nutritional yeast. Stir until well combined.

-Add tomato and spinach. Stir occasionally until spinach becomes slightly wilted.

-Serve with toast of your choice and top with avocado, green onion, or whatever else your heart desires!


This dish is perfect when you're craving something savory at breakfast time. Feel free to play around with the spices depending on what flavors you like (note: the turmeric is what gives the tofu its yellow coloring).
